3 (8-oz) boneless, skinless chicken breasts, halved lengthwise
2 red bell peppers, cut into chunks
1 red onion, sliced crosswise into rings
3 Tbsp olive oil
2 Tbsp minced garlic
¾ tsp kosher salt
¾ tsp pepper
½ cup pitted kalamata olives
1 Tbsp chopped fresh oregano
½ cup crumbled feta cheese
Preheat oven to 425°F. Toss together chicken, bell peppers, onion, oil, garlic, salt, and pepper on a large rimmed baking sheet; spread in a single layer.
Bake 20 to 25 minutes or until chicken is done.
Stir olives and oregano into bell pepper mixture; sprinkle with cheese.
